To start, take your BRISKET out of the refrigerator and place it in a 4 inch deep pan lined with parchment paper to sit out. Let it come to room temperature for about an hour.
Next, preheat the oven to 275 F Once the BRISKET is up to room temperature, trim the excess fat on the top layer to about ¼ inch thick. (not an exact science). Once trimmed, Open your bottle of Sweet Revenge Mustard Barbecue Sauce and pour over your BRISKET to cover all areas (amount will vary depending on the size of your brisket). Rub the mustard into all areas of the BRISKET. Now coated with your bbq mustard binder. You are going to apply the rub. Pop the lid on your bottle of SWEET CRACKED PEPPER RUB and coat all sides of your BRISKET, rubbing the mix into all the tight spots. Once finished wrap the BRISKET with the parchment paper. Cooking time At 275 F the brisket will cook for around 1 hour 15 minutes per pound. (ex. 2lbs x 1.25hrs = 2.5hrs cooking time) Once the BRISKET has cooked, take it out of the oven and let it rest (covered still) for 30 to 60 minutes. Now unwrap your brisket and place on a new sheet of parchment to then wrap. Now place the brisket inside a cooler for a second rest for 2 - 3 hours. Now is the moment you’ve been waiting for. Unwrap your BRISKET showing the world your creation. Using a long sharp knife, thinly slice the BRISKET into ¼ inch slices across the grain.
