Barbecue Tofu Spring Rolls - Sweet Revenge

 AKA: Sticky BBQ Burritos
 
We love getting the kids involved in the kitchen! It might be more work and a bit messier, but instilling in them a love of food and cooking can be incredibly rewarding. One way to include kids more, without as much mess, is by letting them assemble their meal. This gives kids an opportunity to voice their preferences and feel like they helped “cook” their meal. One of our favorite recipes that allows us to prepare the ingredients ahead of time, but allows the kids to get involved with assembly is with Sticky Burritos, or BBQ Spring Rolls. ​
What you'll need
 
  • Sweet Revenge Barbecue Sauce (we use the medium flavor)
  • Soy Sauce
  • Sesame seed oil
  • Extra Firm Tofu  - protein of choice

  • Spring Roll Wrappers
  • Rice noodles
  • Carrots
  • Cucumber
  • Avocado
 
How to prepare the Tofu:
  • Start by pressing tofu to remove excess water.  This will give the tofu a denser, meatier texture. Cut the block of tofu into three sections, place on a kitchen towel and top with another towel to absorb the moisture. 
  • Next, using a 13 x 9 baking dish or a cutting board (using a wooden cutting board can result in warping the cutting board due to the excess water) place it on top of the tofu folded in kitchen towels. Then add additional weight, we use books and a large fruit bowl for the weight.
 
Now that the tofu is pressing you can start working on the rest.
 
Prepare the marinade:
  • 1 CUP - Sweet Revenge Barbecue Sauce
  • 1/8 CUP - Soy Sauce
  • 2 TBSP - Sesame oil
 
After about an hour the tofu should look very well pressed. You can let the tofu press longer as desired.
  • Cut the tofu block into 18 strips and put into a container.
  • Pour the marinade over the tofu, coat thoroughly.. Place in the fridge until ready to use.
 
While your tofu is marinating we can prep the rest.
 
Prepare the Veg
These are the veggies we use and our kids like but you can use what works best for you
  • Thinly cut the carrots and cucumbers.
  • Cut the avocado in half and remove the seed. Cut the avocado halves into strips and set aside with other veggies.
 
At this point we need to cook the rice noodles and bake/air fry the tofu, we can do both simultaneously.
 
 
Following the instructions on how to cook your rice noodles to perfection:
Bring 6 cups of water to a boil and lightly salt the water (about a tsp)
Once the water is boiling place your rice noodle sheets to cook for the instructed time (6 minutes).
Once the noodles are cooked, strain the water off and rinse with cold water to prevent over cooking them and turning them to mush. 
 
While cooking the noodles, let's cook the tofu.
 
Air fryer
  • Using the air fryer set at 350°F place the marinade tofu in the pan and cook for 8 - 10 minutes per batch.
Oven
  • Using the oven set at 400°F and place marinade tofu on sheet pan baking for 20-24 minutes.
 
Sticky Burritos…Assemble
 
Now that all the fillings are ready we can make our sticky burritos.
  • Using two plates, fill one with water and use the other for assembly.
  • Dip your spring roll wrappers in the water, completely coating them.
  • Lift your wrapper out of the water and let excess water drip off.
  • Using your other plate, place the now wet wrapper and begin assembling your spring roll.
  • Choose the filling you like and place on the first third closest to you leaving room for you to grab the rice sheet wrapper. 
 
Folding
 
  • Once the fillings are in the wrapper it will be malleable and sticky.
  • Pinch the edge closest to you and fold over rolling the filling with it.
  • Now fold the sides over the filling and continue to roll the spring roll while tucking in anything falling out keeping it nice and tight.
 
Enjoy!
